Margarita Cupcakes With Tequila-Lime Buttercream

My sweet friend Gwen had a birthday this past week. I know how much she loves margaritas and Jimmy Buffett, so I wanted to put together a great dessert for her because these two things go hand in hand. Who doesn’t love tequila and lime? (Well, ok, we know a few of you don’t anymore, but you did once, right?) Making these made me want to be wasting away in Margaritaville! Enjoy!

Ingredients
Cupcakes:
*3 C Flour
1 T Baking powder
1/2 tsp Salt
2 sticks Unsalted, room temperature butter
2 C Granulated sugar
3 Eggs, room temperature
1 Egg white
3 Limes, zested and juiced
1/2 tsp Vanilla
1 C Buttermilk
2 T Tequila
Instructions
- Place butter in the bowl of a stand mixer fitted with the paddle attachment. Beat until butter is fluffy. Slowly add 5 C powdered sugar, lime juice, tequila, salt, and lime zest. Mix until thick and creamy. Add more powdered sugar until the frosting is of good piping consistency.
- Pipe frosting onto cooled cupcakes, and garnish with small lime slices and flake salt.
Additional Notes
* Make the cupcakes a day in advance if you can, and brush with tequila a few more times. ** The batter may look separated, but it will come together as you continue to mix it.
